Goa Curry




200 gr. chicken breast, clean of bones and cut into strips
1 tbs. roasted cashews
5 tbs. cooked green lentils
1 red chili pepper, chopped
½ white onion, thinly sliced
5 tbs. peas


For the curry sauce
5 tbs. yellow curry paste
1 ½ cup of water
1 liter coconut milk
4 tbs. Sugar
¼ cup fish sauce
1 stalk lemongrass, chopped

8 kaffir lime leaves


To Serve:
A handful of fresh mint leaves
A handful of coriander
Cooked Jasmine rice


How to prepare:
1. Make the curry sauce: Bring all the sauce ingredients to a boil and turn off the stove.
2. Prepare the dish: In a large pot, heat the sauce. Add the chicken breast strips and bring to a boil.
3. Add the remaining ingredients and bring to a boil again while stirring.
4. Remove pot from the stove, pour into two soup bowls and garnish with coriander and fresh mint leaves. Serve with Jasmine rice.
